This Granola is amazing, but then it would be because it comes from the cook book, Cook Eat Smile, by Bill Collison.
Good Garden Granola.
2 tbsp honey
1 tbsp vanilla extract
1 tbsp sunflower oil
1 generous knob of butter
40g light brown sugar
220g Jumbo oats (Holland and Barrett sell these or large supermarkets)
150g chopped mixed nuts (any or all of brazils, almond, peanuts)
60g mixed seeds (pumping, sunflower, linseed)
Chopped dried fruit if required, whatever amount you prefer.
Makes roughly 500g
Preheat the oven to 120c/100c fan/gas mark half
Gently warm the honey, vanilla extract, oil, butter and sugar together in a small pan. When the honey is nicely runny and the sugar has melted, take the pan off the heat and add 2 tablespoons of cold water.
Put all the dry ingredients in a bowl and add the honey mixture. Stir thoroughly to make sure that everything is well coated, then spread over a large shallow baking tray lined with baking parchment. Bake for 50 minutes, stirring every 15 minutes or so to ensure the granola browns evenly and to stop it sticking to the tray.
Remove the tray from the oven and allow the granola to cool completely. This is the moment to add chopped dried fruit, apricots, dried blueberries or cranberries for instance, if you like, before storing in an airtight jar.
Fantastic mixed with vanilla yoghurt and drizzled with honey.
I now make four batches at once as my sons always take some home, plus we seem to eat it rather quickly, so one batch is really not enough.
