Quite a few of you have asked me for the cake recipe in mondays blog, called Spiced Apple Cake. As you know we are all going to be snowed in this weekend (I wish!) so you all need to bake one for emergency supplies, or two or three! Obviously if it doesn't snow you can eat all of the cake as a kind of conciliation prize!
225g unsalted butter, softened
200g light soft brown sugar
6 tablespoons honey
275g plain wholemeal flour
75g plain flour
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
5 eggs beaten
3 tablespoons ground almonds
50g sultanas
550g tart cooking apples, (that always makes me snigger,)peeled cored and finely chopped
4 tablespoons milk
3 - 4 tablespoons flaked almonds toasted
icing sugar for dusting
a cake tin 23cm square, buttered and lightly floured. (mine was oblong and was fine)
Preheat the oven to 160c (325f) Gas 3
Put the butter and brown sugar in a mixing bowl and cream together until light and fluffy. Beat in the honey. In a separate bowl, combine the flours, baking powder,cinnamon, cloves, ginger and nutmeg.
Fold the dry ingredients into the butter mixture, then add the eggs and mix well. Fold in the ground almonds, sultanas, apples and milk and mix just to combine Transfer the mixture into the prepared tin and level the top.
Bake in the preheated oven for 50 - 60 minutes, until risen and golden and a skewer inserted in the middle of the cake comes out clean. Let cool slightly in the tin then turn out onto a wire rack. When cool sprinkle with the flaked almonds and dust with icing sugar. cut into squares to serve.
Eat large quantities so that you have enough energy to go out in the snow and make an amazing snowman and send me the pictures!
